Potato dish with tomato sauce

Tomatoes are boiled and wiped through a sieve. Finely chopped onions are browned in vegetable oil, flour is poured, added: tomato sauce, salt, sugar, crushed red pepper and bay leaf. In this sauce, diluted with '/2 cup of water, the sliced potatoes are placed and boiled until softened. When ready, it is tipped onto a deep dish and sprinkled on top with a small amount of grated cheese or brynza.
