Varenets
Melted milk is used to prepare a tasty and healthy fermented milk product called varenets. The recipe for the drink may contain a different ratio of milk and sourdough (sour cream), and there are also different technologies by which varenets are prepared. Here's one way.
milk - 1.5 l, sour cream - 1 tbsp. spoon
Pour the milk into 3 glass bottles and put in a large, not too deep clay bowl. Place a bowl of milk bottles in the oven. As a result of heating (at a low temperature), foams are formed on milk. They should be lowered with a spoon to the bottom. Repeat this procedure 4 times. Pour 1 cup of milk, cool, mix with sour cream. Then mix with the rest of the milk. Pour the milk into glasses, distribute the foam equally and place in a warm place. To speed up the skimming process, you can add a crust of black bread to the milk. When the milk dries, put in the refrigerator. * Varenets can be prepared differently. Heat 1 liter of milk in the oven at a temperature of 150-160 degrees. Pour the foams into the milk 5-6 times. When the volume of milk is reduced by half, cool the melted milk and mix sour cream into it. Leave in a warm place for the day. After thickening, place the varenets in the refrigerator. * Serve varenets with sugar mixed with cinnamon or honey.
