Bread salad with vegetables

Mix half the vinegar with 200ml of water. Cut the bread into slices and soak in the acetic mixture for 10 minutes. Finely cut the spring onions, cut the tomatoes into 8 lobes, cut the cucumber into cubes. Squeeze the bread, mash and mix with vegetables. Pass the garlic through the press, mix with the remaining vinegar, salt, pepper and olive oil. Pour the salad into the dressing, stir and let stand for 30 minutes. Garnish with thyme leaves and serve.
