Eggplant salad with onions and green peas
Peel, slice and simmer the aubergines in vegetable oil with the onions finely chopped. Cut the apple and eggs into small cubes. Mix the chilled aubergines with the green peas, eggs and apple. For the sauce, mix mayonnaise, sour cream, mustard and crushed garlic, season the salad, mix and decorate with herbs.
