Assorted salad with soybeans

Soak the soybeans in cold water overnight, then rinse and boil in salted water until soft (make sure the soybeans do not boil), roll back in a colander and cool. Burn the nuts lightly in the oven or fry in a dry pan, stirring constantly. Peel the fried nuts from dry skin and grind. Peel the beets and carrots and grate over a coarse grater. Peel the apples from the skin and core and grate on a coarse grater too. Mix the soy with the apples, carrots, beetroot and nuts, add the sugar, salt and season with sour cream.
