Salad aperitif
Peel the celery and cut into small pieces. Cut the carrots, peel the apples from the skin and seeds and chop too. Drizzle everything with lemon juice. Cut the meat into small cubes. For the sauce, mix yogurt, sour cream, lemon juice, honey, mustard, salt and pepper. Stir the meat, celery, carrots, apples and almonds, season with the cooked sauce and garnish with watercress.
