soak beans in water from the evening. cook until soft on low heat the next day. strain through a sieve. cut the onion into straws and add to the beans together with the chopped parsley. prepare a dressing of vinegar, vegetable oil and salt and pour over the salad. divide into portions and sprinkle with pepper if desired.
