Orange and prunes salad

Rinse the prunes well, pour boiling water, boil until soft and cool. Then remove the bones and cut the flesh into straws. Peel the oranges, cut into cubes, combine with prunes, put in a salad bowl and sprinkle with grated zest. Prepare the dressing: Grind the yolks with sugar and gradually dilute with boiled milk, infusing it with a thin trickle. Then pour in vanilla sugar, stir, cool, pour this mixture over the salad and serve it.
