Boker salad (salade beaucaire)

Beat mustard, vinegar, olive oil and pour the resulting dressing with herbs and celery roots. Hold for 1 hour. Add ham, mushrooms, apples and gently mix with mayonnaise. Transfer everything to a dish, garnish with wedges of boiled potatoes, beets and parsley greens.
