Orange and celery salad (salade d oranges et de celeri)

Cut celery root with small straws and mix with orange wedges cut into 4 parts. Season with a little olive (corn or other vegetable refined) oil whipped with lemon juice. The salad is very good to serve to a roast of hare or rabbit.
