Tomato and bean pod paradis salad (salade paradis)

Heat sour cream or cream in a water bath and mix with vinegar, mustard, olive oil, salt and pepper. Keep the mixture in a water bath, stirring until it thickens. Remove from the heat and refrigerate for 5 minutes. Mix tomatoes, lettuce, beans, parsley and eggs well, pour over the prepared dressing and stir again.
