Carrot (or parsnip) and pepper salad

Grate 75g carrots (or parsnips) over a coarse grater and mix with chopped thin strips of sweet pepper (75g). Stir and add 25g of ground walnuts (or peanuts), lemon juice and crushed parsley greens. Garnish with lemon wedges and basil greens.
