Prawn salad with patissons and pickled mushrooms

Boil the shrimp, peel from the shell, drizzle with lemon juice. Cut cooked potatoes, scallops and pickled mushrooms into thin slices. Season with mayonnaise, sugar, salt, stir and put in a salad bowl. Put shrimp and wedges of hard-boiled egg on top. Garnish with sprigs of parsley. Canned shrimp can be used instead of boiled shrimp. The same salad can be made with canned crabs or boiled scallop muscle.
