White cabbage salad with greens

Finely chop the cabbage, sprinkle with salt and rub with your hands until the juice is released. Leave the cabbage for 30 minutes, then drain the juice. Rinse the parsley greens and finely chop them. Mix with cabbage and season with vegetable oil, vinegar and sugar. This salad is best served chilled as a side dish for meat and fish dishes.
