Cut the crusts from the loaf, cut into 1cm-thick slices and drizzle with milk. Mix the grated cheese with melted butter, salt, spread bread, sprinkle with ground red pepper on top. Place the croutons on a baking sheet and bake in a hot oven for 5 minutes until golden. Serve hot to broth, clear soups or as an independent snack.
