at one end of a lightly toasted or buttered oblong piece of bread put a leaf of lettuce so that it hangs over the edge of the bread. peel the sausage or sausage from the shell or cut it so that the shell does not tighten when toasted, then cut lengthways and fry lightly in oil. place the toasted halves along the bread on a leaf of lettuce. put the eye on one end so that it partially covers the sausage. at the other end place some bracketed horseradish.
