Urinated apples
Urinated apples are a recipe for Russian cuisine, traditional and beloved. Antonovka, Babushkino, Skrizhapel are selected for urination - sour, storage-resistant medium-sized apples. Of course, many will agree that the best urinated apples are obtained from Russian antonovka, fragrant, purposeful, with yellow sides.

A recipe for urinated apples can use one of two ways: using wort and sweetened water. To make the wort, 200 g of rye flour and 50 g of salt are taken for 10 liters of water. Rye flour is poured with boiling water, salt is added, mixed, allowed to infuse and strained. To prepare sweet water, 400 g of sugar, 75 g of salt are taken for 10 liters of water. Water is boiled with sugar and salt, cooled. A layer of leaves - blackcurrants or cherries - is placed on the bottom of the barrel, apples are washed with cold water and placed in rows with peduncles, alternating with leaves every 2-3 rows. In both cases, there must be a layer of leaves or straw on top. Then the container is covered with a lid (circle), and a small load is installed on it. The liquid should constantly cover the apples. After 3-4 days, when active fermentation begins, the urinated apples are transferred to a cold place, where they are perfectly stored until spring. Instead of black or cherry leaves, rye, wheat, or oat straw may be used. The straw layer is placed on the bottom of the container and covered with the top layer of apples.
