For smoking, we choose the most delicate lard, with or without current skin. Salt as usual, then scrape off the salt, rinse the lard in warm water and dry for a day. Smoke it cold for 24 hours to a pleasant yellowish-brown color. Lard can be stored in the cellar for up to six months.
