prepare a cutlet mass from fish in the same way as for cutlets and round rissoles. spread a towel wetted with water on the table, put portions of the cutlet mass and give them the shape of tortillas. put minced meat on the middle of each fish cake. use a towel to fold the tortillas in half so that they take the shape of a crescent moon. for mince: boiled dried mushrooms, boiled sturgeon cartilage and hard-boiled eggs, cut, mix with sautéed onions, add crumbs, parsley greens, season with salt and pepper, stir. minced meat can only be made from eggs and onions with a small amount of ground wheat crumbs added. wet the moulded solid in a beaten egg, plan in crumbs and fry in vegetable oil for 3- 4 minutes. then place in a dry pan and put in the oven for 4- 5 minutes. serve simmer with green peas or chips and tomato sauce, sprinkle with herbs.
