Mackerel baked with tomatoes and herbs

In a dish greased with oil, fold the tomatoes, cut into circles, sprinkle with finely chopped parsley greens, salt and pepper. Over the tomatoes, lay the prepared mackerel carcass, then the tomatoes again, oil, sprinkle with ground crumbs and bake in the oven. It can be served both hot and cold with boiled potatoes or vegetable salad.
