Fried squid with wine

Clean the squid, rinse and wet with a napkin to remove excess moisture. Cut into a wide straw 4-5 cm long. Dissolve the sugar in the wine, add the soy sauce and ginger. Pour in the resulting squid sauce and mix well. Place a light weight on top and leave the squid for 6 hours, stirring them thoroughly from time to time. Before frying, tip the squid into a colander so the glass is liquid. Fry the squid quickly in the preheated vegetable oil over high heat. Rinse the lettuce leaves, dry, halve along and place on a dish. Pour squid in the center with a slide - they will look very spectacular.
