Curd pudding with candied fruit

Wipe the curd through a sieve, put egg yolks, sugar, salt, zest from an orange, semolina and pour melted butter into it. Beat the whole mass with a wooden spatula. Then add the peeled and washed raisins, candied fruits, cut into small cubes, and proteins beaten into thick foam, transfer the curd mass to a mold lubricated inside and sprinkled with sugar, and steam or bake B in the oven (in the latter case, sprinkle the mold not with sugar, but with crushed crumbs). On the table, serve the pudding hot with fruit syrup or jam.
