remove the crust from the bun, cut into small cubes and pour milk. melt butter, rub with sugar and yolks, add lemon zest and a bun soaked in milk. all together thoroughly knead, add raisins, jam without syrup, foam of whipped proteins and knead again. put the prepared mass in a greased tin or napkin and cook for 1 hour (see "puddings"). Serve with syrup of any jam.
