Cured carrots

Wash the carrots, peel, cut into thin circles, sprinkle with sugar mixed with citric acid and vanillin and stand under yoke until juiced. Then put on a low heat, bring to a boil, remove from the heat and drain the juice. Put the carrot circles on an oiled baking sheet and dry them in the oven so that the carrots remain elastic.
