Beetroot baked with eggs

Wash the beets and bake in the oven until tender (you can cook). After that, chill the beetroot, peel and cut into thin, long strips or small, thin slices. Preheat the pan with the butter and fry the beetroot, having previously sealed it in flour. Whisk the eggs, adding sour cream, black ground pepper and salt to them, pour the fried beets with this mixture. Place the pan with the beetroot in a preheated oven and bake at moderate temperatures until the surface is covered with a ruddy crust. Before serving, garnish the dish with slices of boiled beetroot and finely chopped parsley greens.

butter - 3-4 tbsp. spoons, beets - 1 pc., parsley greens - 30 g, salt to taste, wheat flour - 3-4 tbsp. spoons, eggs - 2 pcs., sour cream - 3 tbsp. spoons, ground black pepper - 0.3 tsp
