Cut into small cubes 2 peeled courgettes, 2 aubergines, 4 heads of onions, 3 pods of green sweet pepper and put in a saucepan, bay with water and vegetable oil, taken in equal parts, so that the vegetables are covered. Add salt and black ground pepper to taste, 1-2 bay leaves, a small head of garlic. Put the pan on a high heat and, when the dish boils, remove from the heat. Cover the pan with a piece of paper greased with oil, cover again and put in the oven. Bake at a moderate temperature for one and a half hours. Serve cold.
