Celery braised in tomato juice

Peel and dice the celery root. Finely chop the celery leaves. Put everything in a saucepan, add vegetable oil, pour in hot water, salt, cook until tender, pour in tomato juice, put butter, flour and mix. Then heat over a low heat for 10 minutes, salt, drizzle with lemon juice, sprinkle with grated lemon zest and serve.
