Fried plantain

Rinse the plantain thoroughly and lower it into boiling water for a few seconds. After that, rinse it with cold water, dry it and lower it into boiling water again for 20-30 seconds. Wash while constantly changing water until the bitterness is gone. Tip the boiled plantain into a colander or lightly squeeze with your hands, and then cut into narrow strips. Peel and cut the onions into half rings. Finely chop the garlic. Preheat the pan with the vegetable oil and fry the onions until golden, then add the plantain, spring onions and stir-fry until tender. At the end of cooking, add the garlic, soy sauce, salt if necessary, stir and fry for a further 1-2 minutes. This dish can be served both hot and cold.
