Bulgarian omelette

dust the eggs into a plate, stir well, add finely chopped and toasted capsicum and grated brynza. pour this mixture onto a baking tray or frying pan with the preheated fat and fry. double the ready omelette, put on a plate and sprinkle with parsley greens. if the omelette is fried on a baking sheet, then cut the ready omelette into squares and double the each with a triangle. serve, sprinkled with herbs.
