Zucchini fritters (serves 4)

Grate three peeled courgettes on a coarse grater, add 3 pre-beaten eggs, mix, introduce flour. If the squash is very juicy, add more flour. Salt at the last minute so that the juice does not stand out from the courgettes. Then spoon the fritters on a hot frying pan. Fritters can be served with any sauce or sour cream.
