Potatoes, fried with cheese or onions

Pour thoroughly washed potatoes (one and a half kilograms) with boiling water and cook until half cooked, then drain, cool, peel and cut into thick circles. Rub one or two garlic wedges, finely chop parsley and onion, lightly fry all this in lean oil. Add the chopped potatoes, salt and fry until golden. Serve hot, sprinkled with two to three spoons of grated cheese or fried onions.
