Stuffed tomatoes

Wash and dry the tomatoes. Cut each tomato in a horizontal plane into two parts. Carefully remove the flesh with the seeds with a teaspoon. Separate proteins from yolks. Finely chop shrimp meat, ham; a loin. Add egg whites, salt, rice wine or cognac to the meat mixture and mix thoroughly. Fill the halves of tomatoes with the resulting minced meat. Sprinkle the stuffed tomatoes with starch and dip (on the side where the filling is) into the whipped yolks. Melt pork fat in a deep pan and fry the stuffed tomatoes in it for 2 minutes, turning. Put the fried tomatoes with minced meat on top in the same pan, pour ketchup, drizzle with rice wine or cognac, salt, pour in the hot soy sauce and simmer under the lid until tender. Drizzle with sesame oil before serving.
