Lemon cake filling




Filling cooking method: Stir 2 egg yolks, milk, pinch of salt, 100g sugar well and steam. When the mass starts to thicken, add 100g of butter, grated zest and juice from 1 lemon to it. Remove the mass from steam, cool and mix until foam is formed.
