They can be prepared in two ways. In the first method prepared cutlet meat is fried and then stewed till ready. Ready meat together with sautéed onions is passed through a meat grinder, and broth from meat stewing is used to prepare a sauce. In the second method, cutlet meat is passed through a meat grinder and fried on a deep baking sheet in an oven until ready. The finished meat is passed again through a meat grinder with sautéed onions, and meat juice released during frying is used for the sauce. Additional components are introduced into the finished mince.
