Finely chop the onions, grate the garlic, heat the oil in a pan and fry the onions and garlic until soft. Transfer to a saucepan. Cut the meat into thin pieces, roll in flour and fry on 2 sides until a ruddy crust forms. Pour in the brandy when it stops bubbling, transfer the meat to a saucepan, pour in the wine, broth, salt, pepper. Simmer under the lid for 45 minutes, until the meat is soft and the sauce thickens. Sprinkle with chopped parsley and garnish with sprigs of parsley.
