Pello (pork with rice and pineapples)
Cut the meat into pieces, fry in oil, add coriander, cloves, finely chopped onions and fry, stirring, for 10-12 minutes. Pour in a third of a glass of water and simmer until soft. Boil the rice, cool and mix with pieces of pineapple. Put the stew with the sauce in a baking dish, put the rice with pineapple on it, sprinkle with cinnamon and cardamom, sprinkle with water. Lightly brown the remaining pineapple pieces with sugar and pineapple juice over a small heat. Place the cooked mixture on the rice in the tin and bake in the oven for 10 minutes.
