cut the meat into portions and fry on fat over a high heat. fry separately finely chopped onions and garlic. fold the sweet into a saucepan. toasted onions, garlic and pour in dry red wine. after the wine boils a little, pour in the meat, chicken broth or water and put the tomato infusion (or peeled tomatoes). then put the dry porcini mushrooms pre-soaked. close the pan with a lid and keep on a low heat for 2- 3 hours (until the meat is soft).
