"drunk" chicken

clean the chicken, wash and dry well. the legs are tied together to better hold the shape. bring water to a boil, add salt. put the chicken in the boiling water, cover and extinguish the fire. cool to room temperature. when the water has cooled, remove and dry the chicken. put in a bowl or large jar and fill completely with wine. close tightly and refrigerate for approximately a week. before serving, chop into small pieces and serve cold. the remaining wine can be refrigerated and used for marinades.
