Chicken braised with chestnuts

prepare the chicken and chop into pieces measuring about 5 cm. Chestnuts cut, lower for 5 minutes in boiling water, remove clean while they are hot. heat the vegetable oil in a wok or pan and fry the chicken until golden. pour in rice wine or sherry. when some of the wine has evaporated, put the chestnuts in and add 3 tablespoons of water. close tightly with a lid and simmer over low heat for about 45 minutes until the chestnuts are soft.
