Fried chicken with mushrooms

cook the chicken, rinse and dry thoroughly. chop into pieces of 4 cm each, wash and dry the mushrooms, cut large mushrooms into slices, leave small ones whole. finely chop the garlic. heat the vegetable oil in a wok or frying pan and fry the chopped garlic over medium heat. when the garlic flavors go into vegetable oil, remove the garlic and, increasing the heat, put the chopped chicken. fry until light brown for 10 minutes, then add the mushrooms, reduce the heat and cook under a closed lid for a further 5 minutes. pour in the rice wine or sherry when some of the wine has evaporated, pour in the soy sauce or salt and add 1 tablespoon of water. Add sodium glutamate. stand under a closed lid over a low heat for another 10 minutes.
