Chicken canape

1 serving

150 g of white bread, 200 g of boiled chicken, 100 g of butter or 3 tbsp. spoons of mayonnaise, 50 g of spicy Roquefort cheese, 3-4 leaves of sphina ta, 3-5 pitted olives, 50 g of butter for frying, 3-4 sprigs of parsley, salt to taste. Wash the spinach leaves without stems, lower them into salted boiling water, bring to a boil and cast them into a colander so that the glasses are water. Then wipe hot through a sieve, cool and rub thoroughly with oil or mayonnaise until smooth. Cut any figures (squares, diamonds, circles, triangles) 5-6 cm in size and 0. 5-1 cm thick from slightly stale bread with a knife or using molds. Heat butter in a pan and fry pieces of bread on both sides in it so that a ruddy crust forms, but the bread does not dry. Cool the toasted slices of bread, grease with oil paste and put a piece of cheese and chicken on top. Garnish the canapés with halves of olives and small sprigs of parsley, place on a serving dish and serve.
