Crispy fried chicken

cut the chicken meat into cubes. fold the chopped meat into a separate container, pour in the rice wine, add salt and sodium glutamate and leave to marinate for 30 minutes. prepare the breading mixture by mixing the whipped protein and corn starch. drop chicken meat cubes into starch-protein mixture. cut into kohlrabi straws or peeled cabbage cones and mix with sugar, vinegar and ketchup. heat the vegetable oil in a wok or pan and fry the meat cubes in portions for 1-2 minutes. remove and let the oil drain. reheat the oil in the wok and fry the chicken cubes again until golden brownish. remove, allow to drain oil, drizzle with sesame oil and place on half the dish. place cabbage cut into straws on the second half of the dish. sprinkle with a mixture of salt and ground pepper and serve.
