Twice cooked duck

prepare the duck, (without soaking) and boil for 30-40 minutes in unsalted water without adding spices. remove the bird from the decoction and cool a little. finely chop 1 onion. salt the duck, grate the inside with half the ground chilli, stuff with finely chopped onions and sew the abdominal cavity. decoction, in which the duck was prepared, strain, put stuffed poultry carcass in it and boil for another 10-15 minutes. remove the duck and let drain the liquid. Finely chop the second onion and peeled garlic cloves. pour 1 cup of duck decoction into a deep pan, add sugar, salt, remaining ground chilli, pour in soy sauce and bring to a boil over a high heat. put the duck in the boiling marinade and simmer under the covered lid until the liquid evaporates completely. if, by the time of complete evaporation, the duck is not yet soft enough, gradually add the rest of the broth and evaporate until a thick sauce forms. duck, cut into portions, serve hot with pickled or baked apples or pickled plums
