Wild duck or fried goose
Fried whole wild duck is a gorgeous dish that can make any menu festive. It is important to properly prepare the game for cooking and remember to regularly pour juice on it during frying.
duck - 1 pc., or goose - 1 pc., allspice - 6 peas, black peas - 6 peas, nutmeg - 0.25 pcs., cumin - 0.25 tsp, parsley greens to taste, salt to taste
Dry the peeled, gutted and well-washed duck, grate with salt, ground pepper, grated nutmeg, cumin, finely chopped parsley greens. Leave for half an hour to remove the specific smell. Fry the duck prepared in this way in the oven, watering with the formed juice. If there is little juice, top up with hot water or broth. Fry the duck for about an hour. Cut the roast duck in half or into 4 parts and serve with mashed potatoes, roast potatoes, stewed cabbage or baked apples.
