American-style lattice chicken

The chicken carcass is washed in cold water, dried on a napkin, cut along the ridge, then opened, slightly pressed and plastered. The chipped carcass is salted to taste, wetted in vegetable oil, mealed in bread crumbs and grated. They are garnished with sausages and bacon slices toasted on a rack, stuffed with bread crumbs and grated cheese, small tomatoes, potatoes toasted in oil and fresh peas. Dutch sauce with capers and finely chopped pickles is served separately.
