Potatoes braised with giblets

cook the heart and lungs in salted water with onions and carrots, remove, cut into pieces, fry with onions. put them back in the same stock with chopped raw potatoes and simmer in a closed dish. add some vinegar and fried crumbs of bread (black) at the end.
