Melt the butter (or lard) in a wide saucepan and fry the onion lightly in it. Put the meat and brown on both sides. Slightly salt and pepper. Top with thick slices of bread with trimmed crusts, greasing them with a pre-thick layer of mustard. Pour water in half with beer (if desired, the beer can be replaced with white wine, but this will be a departure from the Flemish recipe). Add thyme and bay leaf. Heat to boil, cover and simmer over a low heat for 2 hours. For 15 minutes until cooked, you can add 2 pieces of sugar.
