Beef with vegetables

Cut the meat across the wolves into thin slices. Cut the celery into 3cm pieces, cut the carrots into straws. Finely chop the leeks and ginger. Heat the oil in a wok or in a deep frying pan. Put out the leeks and ginger, add the meat and fry for about 4 minutes, stirring, until tender. Lay out the contents of the pan and keep warm. Reheat 2 tablespoons of oil in the wok. Fry chili pods in it, add Sichuan pepper or freshly ground black pepper. Keep cooking until the chilli pods turn brown. Remove the chili (if chili sauce is used, then leave it in the wok), add sugar and wine. Then add the carrots and fry for half a minute, stirring. Add celery. Stirring, fry for 3 minutes. Add the meat, soy sauce, sesame oil and vinegar. Mix cornstarch, sugar and water. Thicken the sauce with meat and vegetables with this mixture. Beef is served with vegetables hot with rice.
