cut the lamb into straws. finely chop the ginger. whisk the eggs, pour them into the chopped meat, add the ginger and mix thoroughly. heat chicken fat in a wok or pan and fry lamb over high heat for 30-40 seconds. add salt and sodium glutamate, pour in rice wine and warm up for 1 minutes.
