Potato croquettes (serves 4)

cook the peeled potatoes in salted water until tender, drain, cool slightly and pass through a meat grinder. while the mass is warm, put fat, salt, flour, yolks and separately whipped proteins in it. mix and make small flat bars from the resulting dough. first to roll them in flour. then in beaten eggs and in ground crumbs. toast in boiling fat. serve with any vegetables.
